Will Bulgaria finally enter the prestigious global standard for evaluating restaurants “Michelin”? Sofia is about to sign a contract for a preliminary audit of the culinary scene in our country.
What do restaurants have to do to enter this ranking and how should the Shopska salad look like to impress the secret evaluators? Top chef Andre Tokev commented on the topic in the show “Wake up”.
“I am very happy about this news and thank the Sofia Municipality for fighting for the inspectors to come to Bulgaria, which is a big step towards the further culinary development of Bulgaria”, said Andre Tokev.
According to him, this is a big step. And he explained that the star “Michelin” means high quality. “This is a step that also supports small producers — farm products, as quality products will be required in restaurants. Training young people, raising the level. This is not just one industry — it is connected from training, to production, to tourism”, explained Chef Tokev.
He thanked the Sofia Municipality for the initiative and explained that some institution must invite the inspectors, the restaurants cannot do it alone.
