A lot can be said about the taste and benefits of fish, but one thing is certain - the quality of all marine products largely depends on the state of the marine ecosystem. That is why fishermen in Varna region, together with scientists, work to preserve the purity of the waters and biodiversity, which makes fish so tasty and healthy.

Emil Milev has been in the industry for more than 3 decades, writes Nova TV. He says that during this time he has seen almost everything in the sea. Apart from the fact that year after year they are not the same, he and his colleagues are categorical - the most delicious is the Black Sea fish. “The main reason is the low salinity of the sea. As well as the temperature difference - in winter we have low temperatures and in summer they are higher. In winter, the fish manages to accumulate fat and that is why it is very tasty”, says Emil Milev, chairman of the fishing association “Black Sea Sunrise”.

“For example, Norwegian mackerel is better than Spanish. Canadian too. Because the salinity of the water is less in the north than in the Mediterranean Sea”, says Plamen Panayotov, captain of a fishing vessel.

The fact that it is so tasty is also evident from the market. “We can look at the market in Turkey. If Mediterranean fish there is 5 lira, Black Sea fish is 10. This is how the quality of both types of fish is assessed. Another thing that is very important is that a lot of our fish - 90-95% - goes to Greece and Turkey. This is indicative that our fish is delicious and is preferred on the foreign market”, says Emil Milev.

Behind the taste of the fish, however, lies the most important thing - the cleanliness of the marine ecosystem. That is why the fishermen from “Black Sea Sunrise” help clean the sea every year. “We hold a campaign every year. Especially winter fishing with nets. A lot of garbage ends up in our fishing gear”, says Emil Milev.

“We take all kinds of things out of the sea - iron, nylon, a lot of garbage is collected”, says Plamen Panayotov. They also take out old fishing nets.

And the campaign is obviously giving results, because the experienced captains notice that the sea is getting cleaner every year. “The sea has cleared and the types of fish that have appeared are indicative. Many types of fish from the Mediterranean have entered our sea”, says Emil Milev.

”Blue crab, lobster and mackerel. And such fish - Mediterranean. Apparently something is happening that is good for the Black Sea and for fishing”, believes Plamen Panayotov.
