In 2025, it took the average Russian 25 minutes of work to earn a portion of ready-made Russian salad, called Olivier, while a portion of „herring under a fur coat“ cost 31 minutes. This is according to data from an analysis by Romir.

Muscovites are the luckiest: thanks to higher salaries than the average for the country, the „labor cost“ for a portion of prepared Olivier salad for them is only 11 minutes, and for „herring under a fur coat“ - 15 minutes. This is 3-3.5 times less than in some regions.

For example, in the Volga Federal District, a portion of ready-made Olivier salad costs a resident 37 minutes of work, and for „herring under a fur coat“ - 44 minutes. These are the highest indicators in the country. The situation is better in the Siberian Federal District, where a portion of ready-made Olivier salad requires 22 minutes of work compared to 32 minutes for a portion of „herring under a fur coat“, experts said.

According to analysts, in the North-West Federal District, a portion of Olivier salad costs 27 minutes of work, while „herring under a fur coat“ requires 29 minutes.

The average cost of one serving of each type of ready-made salad was calculated. Using Rosstat data on average monthly wages in Russia (for the period from October 2024 to September 2025), the share of wages spent on each ready-made salad was calculated. This share was then converted into working hours based on a standard 40-hour workweek. The study was conducted for the entire country and separately for the Central Federal District, Northwestern Federal District, Volga Federal District, Siberian Federal District and Moscow.
